A Sunday at Whole Foods

Last Sunday, my family and I made a trip to our localWholeFoods in search of some organic fruit juice smoothies for our 3 year old son. It was about 3:00 in the afternoon, too late for lunch and too early for dinner, so we were pleasantly surprised to find several samples available throughout the store.

We made our way from the bakery to the olive bar, to the ever so tasty cheese section and ended up by the refrigerated section. There we ran into a vendor who had a colorful set-up of freshly made chips and salsa…our 3 year old son was immediately drawn to one of his favorite temptations, chips!

These weren’t the usual tortilla chips and salsa…they were black bean flax seed tortilla chips. Our son was initially a little hesitant as he held the almost black tortilla chip in his hand, but you could see his face change as he took the first bite.  The next thing we knew he took a handful of chips from the bowl the vendor had set-up and smiled as he munched away.

Now that our son was happy, my girlfriend and I took our first taste of the chips…they were not only good but delicious with the mango salsa that was set-up along side them. The flavor in the salsa was unbelievably delicious. By that time, we had officially met Alfredo, who was the owner of Bella Sol.

He let us know that his salsa recipe has been in his family for 75 years and that he is committed to using the freshest ingredients for his salsa.  We talked with him for a couple minutes and he let us know that his company was based locally which as a small business owner, it just made it that much greater to know I could support a local business.

As we grabbed a bag of his delicious tortilla chips and a couple of jars of his mango salsa, Alfredo shared a simple and healthy recipe for our dinner.

1. Sauté some fresh spinach in a frying pan with a just a drizzle of olive oil.

2. Add salt and pepper to taste.

3. Fry any fish or chicken of your choice with just a little salt and pepper.

4. Serve fish under a bed of sautéed spinach and top with Bella Sol mango salsa.

We went home and tried this recipe that same night. We used tilapia fillets and our dinner tasted world class!  Thank you Alfredo for this delicious and healthy weeknight dinner option!
